Jairo Arcila is a 63-year-old coffee producer belonging to the third generation of farmers in Quindio, Colombia. He is married to Luz Helena Salazar. Their sons Carlos and Felipe Arcila, also produce coffee and are co-founders of Cofinet.
Jairo started growing coffee 35 years ago when his father became ill and could no longer work. In 1987, Jairo bought his first coffee farm, Finca La Esmeralda. Here he planted his first Caturra trees. Over time, through wise management, he bought five more farms: Villarazo, then Mazatlan, Santa Monica, Maracay and Buenos Aires. Our coffee comes from Santa Monica, Jairo’s largest farm at 50 hectares. The volcanic soils and balanced temperatures, the right altitude and rainfall, allow the production of high quality coffee.

Variety

Castillo is a variety developed by the Federación Nacional de Cafeteros.
It usually produces a higher yield than Caturra and is more resistant to a common disease of coffee plants: leaf rust.

Process

Meet the ‘co-fermented’ coffees. This is acutely at once the most trendy and controversial processing method in the speciality world. In this case, natural anaerobic co-fermented. First, the fruit is harvested under strict maturity parameters.
Then they are rinsed so that the underdeveloped fruit floats to the top and is separated out. The coffee undergoes dry anaerobic fermentation in a sealed barrel for 72 hours with the pulp and skin. At this stage of fermentation, ripe mandarins and specific wine yeast are added. Once fermentation is complete, the beans are stripped depulped and washed. They are dried on so-called ‘African beds’ (elevated structures) and more mandarin fruit is placed among the drying coffee.

This is a method for those who like to celebrate the brewing process of coffee. You use a special kettle with a long spout and a paper filter. First, you pour a little water over the coffee so that it let off the gas – this is called blooming. Then, slowly pouring in the rest of the water, you let the coffee drip straight into the cup. It’s kind of a drip method for coffee. It gives you complete control over the flavour – from light and floral to strong and pronounced.

Recipe:

Conical brewer like v60 or origami with conical filter.

Coffee dose:

18g

Grind setting:

Slightly coarser than brown sugar crystals (comandante 25 clicks).

Water:

300g

Water temperature:

90°C

Preparation:

  1.  Prepare: vessel to which you will be brewing coffee  (can be server, jug or a mug)  , scale, paper filter, chosen brewer
  2. Grind 18g of coffee.
  3. Insert paper filter into the brewer and add 100ml of water to soak it and make it suit the brewer better 
  4. Add coffee and gently distribute it evenly..
  5. Divide your water into 5 pour, 60g each. Pour every potion every 30sec. Start timer when you make first pour:

  6. When the water goes through coffee bed, remove brewer and enjoy the coffee.
