Guama Coffee Washing Station is owned and operated by Baragwi Farmers’ Cooperative Society. This smallholder farmer’s owned factory was started in 1986 with over 3500 smallholder farmers. the size of the farm in this catchment of this coop is typically a little less than normal with the average farmer possessing 300 coffee bushes.

Variety

The coffee varieties SL28, SL34, Ruiru 11, and Batian are crucial to coffee cultivation in Kenya, each offering unique characteristics and adaptability to local conditions.
SL28 was bred by Scott Laboratories in 1931 from Tanganyika D.R. It has become very popular throughout Kenya and is recognised as a variety of exceptional quality. At the same time, the yield of SL28 is relatively low. Although there is insufficient evidence, some sources state that Scott Labs crossed mutations of French Mission, Mocha and Yemen Typica to produce SL 28. Regardless of the exact genetic make-up, their original aim was almost certainly to produce a plant of high quality and reasonable productivity with high drought tolerance.
SL34 is an Arabica variety developed by Scott Agricultural Laboratories. It is renowned for its exceptional resilience to challenging climatic conditions, particularly at high altitudes and during droughts. This makes it ideal for mountainous regions, where it produces high-quality cherries with intense acidity and citrus and fruity notes. Widely grown in Kenya, SL34’s complex flavor profile makes it popular among specialty coffee enthusiasts.
Ruiru 11, developed in the 1980s by the Kenya Coffee Research Institute, is a hybrid of several coffee varieties, including SL28, designed to resist diseases such as coffee leaf rust and fusarium wilt. This variety is more compact, making it suitable for intensive cultivation in smaller areas. While its flavor profile is less complex than classic varieties like SL28 or SL34, it still delivers good quality beans. Ruiru 11 is ideal for lower and mid-altitude regions, where disease resistance is critical.
Batian is another variety developed in Kenya, introduced in 2010 by the Kenya Coffee Research Institute. It is the result of crossbreeding selected Arabica varieties, combining high bean quality with resistance to major coffee diseases, including coffee leaf rust. Batian is well-suited to high-altitude cultivation, much like SL34, and offers a flavor profile with bright acidity and citrus and fruity notes. Due to its disease resistance and high-quality yield, it is favored by farmers looking to produce premium coffee while minimizing the risk of crop loss.

Process

The cherry is delivered at the wet mill ,it is handsorted to remove any foreign matter and also remove blacks then weighed and recorded. It is then introduced to cherry hopper to be pulped.
Once pulped using a 4 disc pulper, cherries are delivered to one of the factory’s fermentation tanks where it will ferment for about 16-24 hours depending on the ambient temperature at that time. The coffee is then fully washed on gradient water channels to remove traces of all mucilage.The parchment will then be delivered to factory’s raised drying beds where it will dry slowly over the course of around 10-18 days. During very hot days it is covered using a shade net. The dried parchment is then transported to own mill (Baragwi Farmer’s Cooperative has their own dry mill in Kirinyaga county) where it is milled and graded to different grades within 3 days. Once fully milled, this coffee is taken to a coffee storage warehouse in Nairobi county (Africa Global Logistics) where it is stored until it is auctioned.

This is a method for those who like to celebrate the brewing process of coffee. You use a special kettle with a long spout and a paper filter. First, you pour a little water over the coffee so that it let off the gas – this is called blooming. Then, slowly pouring in the rest of the water, you let the coffee drip straight into the cup. It’s kind of a drip method for coffee. It gives you complete control over the flavour – from light and floral to strong and pronounced.

slightly finer than brown sugar crystals (around 24 clicks on Comandante grinder).

Preparation:

  1. Prepare: vessel to which you will be brewing coffee  (can be server, jug or a mug)  , scale, paper filter, chosen brewer
  2. Grind 16g of coffee.
  3. Insert paper filter into the brewer and add 100ml of water to soak it and make it suit the brewer better 
  4. Add coffee and gently distribute it evenly..
  5. Divide your water into 5 pour, 50g each. Pour every potion every 30sec. Start timer when you make first pour:

  6. When the water goes through coffee bed, remove brewer and enjoy the coffee.
