The coffee industry in Kenya has had its challenges lately. Farmers were upset about low profits and corruption in the cooperatives, and crop yields were down.
Many people in the area around the Thiriku washing station even started planting other, more profitable crops. But things started to look up when a new importer came along. With the promise of a stable income each season, many farmers returned to coffee. They committed to producing top-quality coffee and improving their farming practices alongside the local agronomist, Bernard Gichu. Thanks to this cooperation, the Thiriku washing station has become special, consistently producing some of the best coffee in the country.

Variety

SL28 was bred by Scott Laboratories in 1931 from Tanganyika D.R. It has become very popular throughout Kenya and is recognised as a variety of exceptional quality.
At the same time, the yield of SL28 is relatively low. Although there is insufficient evidence, some sources state that Scott Labs crossed mutations of French Mission, Mocha and Yemen Typica to produce SL 28. Regardless of the exact genetic make-up, their original aim was almost certainly to produce a plant of high quality and reasonable productivity with high drought tolerance.

Process

In Kenya, washed processing is still the most common method. Freshly harvested coffee fruits are sorted for ripeness, imperfections and impurities. Then, within a maximum of 24 hours, the fruit goes to a wet mill, where it is stripped of its skin and pulp.
The beans then undergo a fermentation process, followed by washing and drying. The quality of a washed-processed coffee depends almost 100% on whether the bean has absorbed sufficient natural sugars and nutrients during the growth cycle. Therefore, washed coffees most fully reflect both the knowledge of growing the perfect coffee bean and the fact that farmers play an integral role in creating its flavour. The maturity of the fruit, the controlled fermentation process, the careful washing and drying of the beans are absolutely key. Washed coffees show to the greatest extent, the natural terroir in the coffee – the characteristics of the country of origin and environmental conditions.

This is a method for those who like to celebrate the brewing process of coffee. You use a special kettle with a long spout and a paper filter. First, you pour a little water over the coffee so that it let off the gas – this is called blooming. Then, slowly pouring in the rest of the water, you let the coffee drip straight into the cup. It’s kind of a drip method for coffee. It gives you complete control over the flavour – from light and floral to strong and pronounced.

Recipe:

Flat Bed Brewer -. April brewer, Origami with Kalita filters.

Coffee dose:

17g

Grind setting:

slightly finer than brown sugar crystals (around 24 clicks on Comandante grinder).

Water:

250g

Water temperature:

94°C

Preparation:

  1. Prepare: vessel to which you will be brewing coffee  (can be server, jug or a mug)  , scale, paper filter, chosen brewer
  2. Grind 16g of coffee.
  3. Insert paper filter into the brewer and add 100ml of water to soak it and make it suit the brewer better 
  4. Add coffee and gently distribute it evenly..
  5. Divide your water into 5 pour, 50g each. Pour every potion every 30sec. Start timer when you make first pour:

  6. When the water goes through coffee bed, remove brewer and enjoy the coffee.
