El Vergel is a farm located in Fresno, Tolima, run by brothers Shady and Elias Bayter.
From a young age, they helped their parents, who started with avocado farming. Life in the countryside brought them closer to each other and to agriculture. In 2012, the brothers discovered their passion for coffee, and two years later, they were captivated by the world of specialty coffee. That’s when they decided to focus their efforts on developing the El Vergel farm. Since 2016, after extensive research on coffee varieties, climate, and soil, the brothers started a special coffee project. El Vergel enjoys a unique microclimate, thanks to its proximity to the snow-capped volcano Nevado del Ruiz.

Variety

Gesha is often associated with coffees from Panama, although in fact cultivation of the Gesha variety only began there in the 1960s.
Gesha is the original coffee variety that was discovered in the 1930s in the mountains around the south-western town of Gesha in Ethiopia. Gesha trees grow tall and can be recognised by their beautiful and elongated leaves. The quality of this coffee increases incredibly with the altitude at which it is grown.

This lot of Gesha has been produced from more than 95% optimally ripe fruits. And went throug an innovative natural anaerobic carbonic maceration process.
This is a type of fermentation derived from winemaking. Carbon dioxide was immediately added to the sealed container of coffee fruits, removing oxygen. In this way, the coffee fermented for 52 hours. The final stage was slow drying in the sun.

This is a method for those who like to celebrate the brewing process of coffee. You use a special kettle with a long spout and a paper filter. First, you pour a little water over the coffee so that it let off the gas – this is called blooming. Then, slowly pouring in the rest of the water, you let the coffee drip straight into the cup. It’s kind of a drip method for coffee. It gives you complete control over the flavour – from light and floral to strong and pronounced.

Recipe:

Brewing method:

Conical brewer like v60 or origami with conical filter.

Coffee dose:

19g

Grind setting:

Slightly coarser than brown sugar crystals (comandante 25 clicks).

Water:

300g

Water temperature:

93°C

Preparation:

  1. Prepare: vessel to which you will be brewing coffee  (can be server, jug or a mug)  , scale, paper filter, chosen brewer
  2. Grind 19g of coffee.
  3. Insert paper filter into the brewer and add 100ml of water to soak it and make it suit the brewer better 
  4. Add coffee and gently distribute it evenly..
  5. Divide your water into 5 pour, 60g each. Pour every potion every 40sec. Start timer when you make first pour:

  6.  When the water goes through coffee bed, remove brewer and enjoy the coffee.
