Guava Banana a flagship project, passionately crafted by Shady and his brother Elias, focusing on some of the most fruity and intense coffees around. From 2016 to 2018, they planted over 40,000 red and yellow Caturra coffee trees, all nestled among guava trees on their farm.
Their farm, El Vergel, is located in Fresno, in the Tolima region. Bayter brothers have been involved in agriculture since childhood, following in the footsteps of their parents who started as avocado growers. Raised in the countryside, Shady and Elias developed a strong connection with farming and the region where they grew up. In 2012, they fell in love with the world of coffee. Two years later, they discovered the specialty coffee movement and in 2016, they began experimenting with coffee varieties, taking advantage of the unique microclimate of their farm, located at the foot of the snow-capped Nevado del Ruiz volcano.

Variety

Caturra is a natural mutation of Bourbon. It was discovered in Brazil in the state of Minas Gerais.
Caturra trees are much lower in height than Bourbon. Hence the considerable interest among growers in this coffee variety. The small size allows the plants to be spaced very close together. This makes it possible to produce more coffee in the same area. Caturra feels best up to 1,600 metres above sea level and, unfortunately, like most Arabicas, is susceptible to diseases and pests. Instead, it gives higher yields and very high quality, but for this the trees need constant fertilisation and supervision.

Process

This coffee has undergone a natural anaerobic process. Coffee fruits are placed in sealed plastic tanks. Oxygen is pushed out through a valve in the tanks as carbon dioxide is released during the fermentation process.
The fruits are then left sealed in the tanks until the desired flavour profile is achieved. This is followed by a series of drying phases, during which the moisture level is gradually reduced before a final drying phase lasting up to 45 days. This stage stabilises the processed fruits, allowing all the flavour potential to be retained.

Pour over

This is a method for those who like to celebrate the brewing process of coffee. You use a special kettle with a long spout and a paper filter. First, you pour a little water over the coffee so that it let off the gas – this is called blooming. Then, slowly pouring in the rest of the water, you let the coffee drip straight into the cup. It’s kind of a drip method for coffee. It gives you complete control over the flavour – from light and floral to strong and pronounced.

Recipe:

Conical brewer like v60 or origami with conical filter.

Coffee dose:

18g

Grind setting:

Slightly coarser than brown sugar crystals (comandante 24 clicks).

Water:

300g

Water temperature:

93°C

Preparation:

  1.  Prepare: vessel to which you will be brewing coffee  (can be server, jug or a mug)  , scale, paper filter, chosen brewer
  2. Grind 18g of coffee.
  3. Insert paper filter into the brewer and add 100ml of water to soak it and make it suit the brewer better 
  4. Add coffee and gently distribute it evenly..
  5. Divide your water into 5 pour, 60g each. Pour every potion every 30sec. Start timer when you make first pour:

  6. When the water goes through coffee bed, remove brewer and enjoy the coffee.
