Finca La Bolsa, located in La Libertad, Huehuetenango, Guatemala, is managed by Maria Elena Vides and spans 1,300 to 1,600 meters above sea level. Founded in 1958 by her grandfather Jorge Vides, the farm has a rich history in both coffee cultivation and community service, including the establishment of a school in 1980. Today, the farm focuses on specialty coffee, growing Caturra and Bourbon varieties, and produces around 152,000 kilograms of green coffee annually.
Finca La Bolsa does not produce other crops. The impact of climate change, particularly in temperature and rain distribution, has led to the development of a flowering index to guide farm activities. Financially, the farm faces challenges due to rising production costs, labour shortages, and inflation. To remain competitive, the farm focuses on quality production in its higher-altitude areas and increased productivity in lower-altitude areas using resistant varieties.
The farm also employs sustainable practices, such as biodiversity enhancement and efficient water use, while supporting local schools and environmental initiatives.

Variety

Bourbon has relatively low yields and is susceptible to major coffee diseases. In the early 18th century, French missionaries brought Bourbon from Yemen to the island of Bourbon (now La Réunion), giving it its current name.
Until the mid-19th century, Bourbon did not leave the island. However, the variety then spread to different parts of the world as missionaries began to settle in Africa and the Americas. Bourbon was brought to Brazil around 1860, and from there it quickly spread northward to other parts of South and Central America, where it is still cultivated today. Here, it was crossed with other varieties related to Bourbon, brought from India, as well as with local Ethiopian varieties. Currently, in East Africa, there are many varieties similar to Bourbon, but none exactly match the distinct Bourbon variety found in Latin America.

Processing

Coffee processing at Finca La Bolsa is detailed and quality-focused. The coffee is manually picked and selected based on maturity and Brix level. After a 24-hour pre-fermentation period, the coffee is weighed, de-pulped, and undergoes 15 to 24 hours of fermentation, depending on the climate. The drying process lasts 15 to 18 days, with the first eight days involving regular movement of the coffee to ensure even drying. After processing, the coffee is stored in nylon bags in the farm’s warehouse before being moved to the dry mill, where traceability is meticulously maintained.
Water management at the farm is efficient, with irrigation only used in the nursery. The farm adheres to national water treatment standards, recycling water through filters and natural barriers before reusing it in coffee cultivation. Pest and disease management is proactive, with constant monitoring to prevent issues before they arise. The farm’s traceability system records every step of the coffee’s journey from cultivation to export, ensuring complete transparency.

This is a method for those who like to celebrate the brewing process of coffee. You use a special kettle with a long spout and a paper filter. First, you pour a little water over the coffee so that it let off the gas – this is called blooming. Then, slowly pouring in the rest of the water, you let the coffee drip straight into the cup. It’s kind of a drip method for coffee. It gives you complete control over the flavour – from light and floral to strong and pronounced.

Preparation:

  1. Prepare: vessel to which you will be brewing coffee  (can be server, jug or a mug)  , scale, paper filter, clever dripper.

  2. Grind 32 g of coffe.

  3. Put paper filter into clever dripper.

  4. Add coffee to clever and add 500ml of 94C water. Start the timer when you start pouring water.

  5. When timer shows 3:00 min put clever on server/jug.

  6. When whole coffee will be released from clever, put it aside and enjoy the coffee.
