This is a mix of daily lots delivered to our warehouse in Jaen. The altitude of the Andes, combined with rich volcanic soils and tropical rainfall, provides Peru with ideal topographic and climatic conditions for producing high-quality Arabica coffee. A problem was identified in post-harvest coffee processing, as farmers had received little to no training on the chemistry and precision required to maximize the quality of their coffees. It was decided that training, which requires special attention, would need financial support to reward farmers who made the extra effort.
In 2018, Falcon Peru SARL was registered as an export company, and a small warehouse with a quality control lab was opened in the northern town of Jaen, in the Cajamarca region. Farmers bring their dry parchment coffee to the warehouse, where it undergoes quality analysis. Some farmers have the opportunity to taste their own coffee for the first time. They receive a cup score and a price offer, which they can accept or decline. In 2019 and 2020, Falcon paid, on average, double the commercial price for parchment coffee in Jaen.
In 2018, Falcon Coffees Peru was established, beginning a partnership with 35 farmers selected based on their potential and willingness to produce high-quality coffee. Most of these farmers were from the Huabal area.
By 2022, Falcon Coffees Peru included:
  • 275 producers across 15 districts in the Cajamarca region,
  • 3 producer associations,
  • 10 full-time employees, 50% of whom are women.
In 2022, the company focused on improving operational and technical activities, which allowed for increased production and the development of their own warehouse facilities. Many smallholder producers lack the infrastructure needed to properly dry coffee, so additional drying facilities were installed near the warehouse to ensure optimum moisture levels and preserve the high quality of the coffee, which would otherwise be compromised without proper drying.

Variety

Bourbon: Originating from the island of Bourbon (now Réunion), this variety is one of the oldest and most revered Arabica types. It is known for its complex flavor profile, often characterized by a balance of sweetness, acidity, and fruitiness, with subtle notes of caramel or chocolate. Bourbon trees are relatively tall and produce high yields, but they are sensitive to diseases and environmental stress. They thrive best in higher altitudes, where they can develop their full flavor potential.
Pache: A natural mutation of the Typica variety, Pache was discovered in Guatemala in the 1950s. It is known for its short stature, which makes it easier to manage and harvest, and it performs well in both high and low altitudes. While its cup quality may not be as complex as Bourbon, Pache offers good body and sweetness, often with mild acidity and nutty or chocolate undertones. This variety is valued for its disease resistance and adaptability, making it popular among farmers in Central America.
Caturra: A mutation of Bourbon, Caturra was discovered in Brazil in the 1930s. It is a dwarf variety, characterized by its short, compact growth, which allows for higher planting densities and easier harvesting. Caturra is known for its bright acidity and clean, crisp flavors, often with fruity or floral notes. Although it has lower disease resistance compared to other varieties, its manageable size and high productivity make it a common choice for farmers, especially in Central and South America.

Process

It is classic and simple natural process. It means cherries after harvest are hand sorted (this stage eliminates visible defects, unripe or overripe cherries and visible other physical objects). Then they are floated to remove non visible defects. In next stage they are sundried for 20-30 days on rised beds until they reach certain moisture content.

Espresso machine

This is a classic among coffees. You make it in an espresso machine, which pushes hot water through finely ground coffee under high pressure. This extracts all the essence from the coffee: intense flavour, aroma and that beautiful creamy foam on top, called crema. Espresso is the basis for many other coffees, such as lattes and cappuccinos. Short, intense and to the point!

35g (there should be 60-70m of water going through coffee).

Recommended brewing time:

Preparation:

  1. Prepare: cup in which you will be drinking espresso, scale, tamper

  2. Grind 18g of coffee.

  3. Add coffee to portafiler and distribute it evenly 

  4. Tamp it evenly/straight with tamper. It doesnt have to be very strong, if you feel the tamper is not going anymore down – that is enough..

  5. Flush the grouphead.

  6. Insert the portafilter and start the extraction.

  7. Put cups under the spouts.

  8. If you use traditional espresso cup (not bigger than 90ml of total volume), you should get not more than ⅓ of a cup.
