The San Carlos Cooperative started operating in 1980 due to reforms that transferred land in this region to farmers. It consists of 672 hectares and is located on the slopes of Mount Cacahuatique.
There are 126 members working together with their families. Together, they produce 25 individual coffee lots. They primarily cultivate Pacas and Bourbon varieties, and recently also Pacamara.”

Variety

Bourbon has relatively low yields and is susceptible to major coffee diseases. In the early 18th century, French missionaries brought Bourbon from Yemen to the island of Bourbon (now La Réunion), giving it its current name.
Until the mid-19th century, Bourbon did not leave the island. However, the variety then spread to different parts of the world as missionaries began to settle in Africa and the Americas. Bourbon was brought to Brazil around 1860, and from there it quickly spread northward to other parts of South and Central America, where it is still cultivated today. Here, it was crossed with other varieties related to Bourbon, brought from India, as well as with local Ethiopian varieties. Currently, in East Africa, there are many varieties similar to Bourbon, but none exactly match the distinct Bourbon variety found in Latin America.

The coffee undergoes Natural Anaerobic processing according to the cooperative’s method and recipe.
After harvest, the fruits are first sorted in water and washed. Those of the appropriate quality are placed in barrels filled with water. At this stage, the temperature is maintained at 22-28°C for 48 hours. After this period, the coffee is washed, cleaned, and dried for 7-10 days.

This is a method for those who like to celebrate the brewing process of coffee. You use a special kettle with a long spout and a paper filter. First, you pour a little water over the coffee so that it let off the gas – this is called blooming. Then, slowly pouring in the rest of the water, you let the coffee drip straight into the cup. It’s kind of a drip method for coffee. It gives you complete control over the flavour – from light and floral to strong and pronounced.

Grind setting:

Jak kryształki cukru trzcinowego (25-27 klików na comandante).

500g

Water temperature:

94°C

Recommended brewing time:

3:00 min + drop time 30/40sec

Preparation:

  1. Prepare: vessel to which you will be brewing coffee  (can be server, jug or a mug)  , scale, paper filter, clever dripper.

  2. Grind 32 g of coffe.

  3. Put paper filter into clever dripper.

  4. Add coffee to clever and add 500ml of 94C water. Start the timer when you start pouring water.

  5. When timer shows 3:00 min put clever on server/jug.

  6. When whole coffee will be released from clever, put it aside and enjoy the coffee.
