Pour over

This is a method for those who like to celebrate the brewing process of coffee. You use a special kettle with a long spout and a paper filter. First, you pour a little water over the coffee so that it let off the gas – this is called blooming. Then, slowly pouring in the rest of the water, you let the coffee drip straight into the cup. It’s kind of a drip method for coffee. It gives you complete control over the flavour – from light and floral to strong and pronounced.

Recipe:

Brewing method:

Conical brewer like v60 or origami with conical filter.

Coffee dose:

18g

Grind setting:

Slightly coarser than brown sugar crystals (comandante 24 clicks).

Water:

300g

Water temperature:

93°C

Preparation:

  1.  Prepare: vessel to which you will be brewing coffee  (can be server, jug or a mug)  , scale, paper filter, chosen brewer
  2. Grind 18g of coffee.
  3. Insert paper filter into the brewer and add 100ml of water to soak it and make it suit the brewer better 
  4. Add coffee and gently distribute it evenly..
  5. Divide your water into 5 pour, 60g each. Pour every potion every 30sec. Start timer when you make first pour:

  6. When the water goes through coffee bed, remove brewer and enjoy the coffee.

The origin of this coffee

Luis Aníbal Calderón needs no introduction for true coffee lovers. With over 40 years of farming experience, he transitioned from producing commodity coffee to creating some of the finest microlots. In 2015, he went all-in and turned Villa Betulia into a collection of rare and exotic varieties such as Gesha, Wush Wush, Pink Bourbon – and Ombligon. By partnering with Cofinet, he has honed experimental processing methods, for which he is now widely recognized.

Variety

The name Ombligon comes from the Spanish ombligo, meaning “belly button” – a nod to the distinctive shape of its cherries. This rare Arabica variety was discovered in Colombia’s Huila region. It is likely a natural mutation of Caturra or Pacamara, with possible influences from wild Ethiopian varieties or Bourbon lines.
The trees have broad leaves and upright-growing branches. The cherries grow closely together and feature a unique “belly button” shape. Ombligon stands out with its sweetness, tropical fruit aroma, silky texture, and complex, refreshing acidity. It’s a coffee made for cuppings and competitions. Produced only in microlots by a handful of growers, it remains a rare and exceptional gem.

Process

The cherries underwent 100 hours of anaerobic fermentation in sealed tanks before being naturally sun-dried. This extended fermentation without oxygen draws out even more sweetness and fruity complexity, while preserving the coffee’s natural character. As always with Calderón’s lots – attention to detail is key.
