Pour over

This is a method for those who like to celebrate the brewing process of coffee. You use a special kettle with a long spout and a paper filter. First, you pour a little water over the coffee so that it let off the gas – this is called blooming. Then, slowly pouring in the rest of the water, you let the coffee drip straight into the cup. It’s kind of a drip method for coffee. It gives you complete control over the flavour – from light and floral to strong and pronounced.

Recipe:

Conical brewer like v60 or origami with conical filter.

Coffee dose:

19g

Grind setting:

Slightly coarser than brown sugar crystals (comandante 25 clicks).

Water:

300g

Water temperature:

93°C

Preparation:

  1. Prepare: vessel to which you will be brewing coffee  (can be server, jug or a mug)  , scale, paper filter, chosen brewer
  2. Grind 19g of coffee.
  3. Insert paper filter into the brewer and add 100ml of water to soak it and make it suit the brewer better 
  4. Add coffee and gently distribute it evenly..
  5. Divide your water into 5 pour, 60g each. Pour every potion every 40sec. Start timer when you make first pour:

  6. When the water goes through coffee bed, remove brewer and enjoy the coffee.

Tracon Trading is a family-owned company based in Addis Ababa, with more than three decades of experience in the coffee industry. The producer operates its own washing stations in Ethiopia’s key regions – Sidamo, Yirgacheffe, Guji, and Limu –
maintaining full control from harvest to export.
Tracon focuses on both traditional washed and natural processes as well as modern methods such as anaerobic fermentation and carbonic maceration. Each lot is fully traceable through the Farmers
Direct Traceability system, ensuring transparency and quality. The company also invests in sustainability, with several stations certified organic and Rainforest Alliance.

Variety

Heirloom is the collective name for Ethiopia’s countless native coffee varieties, many of which remain genetically unclassified. In the Guji zone, and especially in Uraga, these heirloom cultivars thrive at altitudes above 2,000 masl, alongside young trees
of 74410 and 74412 varieties. The region’s volcanic soils, high rainfall, and cool climate slow cherry maturation, producing coffees with floral and citrus aromatics, stone fruit sweetness, and a delicate tea-like finish. Smallholder farmers typically work 1–2 hectare plots, passing them down through generations, making Uraga one of the most celebrated origins in specialty coffee.

Haro Wachu Processing Station, named after the area where it is located, is the only Tracon site dedicated to experimental processes alongside classic washed coffees. More than 500 smallholder farmers deliver fresh cherries here, supported by skilled
labor and resources that make advanced processing possible. For this natural lot, whole cherries were dried in the sun on raised terraces without any additives. The fruits were carefully turned by hand to ensure even drying, resulting in a coffee that is fuller-bodied, with enhanced sweetness and rich, layered flavors.
