Espresso machine

This is a classic among coffees. You make it in an espresso machine, which pushes hot water through finely ground coffee under high pressure. This extracts all the essence from the coffee: intense flavour, aroma and that beautiful creamy foam on top, called crema. Espresso is the basis for many other coffees, such as lattes and cappuccinos. Short, intense and to the point!

18g

Grind setting:

it should look like kitchen salt

Amount of coffee in a cup:

35g (there should be 60-70m of water going through coffee).

Recommended brewing time:

25-28s

Preparation:

  1. Prepare: cup in which you will be drinking espresso, scale, tamper

  2. Grind 18g of coffee.

  3. Add coffee to portafiler and distribute it evenly 

  4. Tamp it evenly/straight with tamper. It doesnt have to be very strong, if you feel the tamper is not going anymore down – that is enough..

  5. Flush the grouphead.

  6. Insert the portafilter and start the extraction.

  7. Put cups under the spouts.

  8. If you use traditional espresso cup (not bigger than 90ml of total volume), you should get not more than ⅓ of a cup.

This coffee comes from producers associated with Valley Coffee Trading in the Amazonas region of Peru. The coffees are grown by local farmers working in close collaboration with the exporter, often on small, shade-grown farms that prioritize sustainable and environmentally friendly practices. Beyond quality, this coffee reflects the work of communities that have developed their farming methods over generations, balancing productivity with care for the land.

Variety

This lot is composed of classic varieties such as Caturra and Bourbon, both widely cultivated in Peru for their reliability and cup quality. Caturra typically brings brightness and structure, while Bourbon contributes sweetness and round body. In the region, these varieties are part of a broader genetic mix that includes Typica, Pache, and Catimor, creating a foundation for balanced and approachable cup profiles with soft fruit, chocolaty and nutty notes.
