Our first washed Ethiopia in a while — and it comes back swinging. Kelloo (“yellow” in Oromiffa) is all about bright, yellow-fruited vibes: florals, tropicals and stone fruits. Clean, sweet, lemony with yellow plum jam finish that makes you question if this is still coffee or some kind of magic.

Pour over

This is a method for those who like to celebrate the brewing process of coffee. You use a special kettle with a long spout and a paper filter. First, you pour a little water over the coffee so that it let off the gas – this is called blooming. Then, slowly pouring in the rest of the water, you let the coffee drip straight into the cup. It’s kind of a drip method for coffee. It gives you complete control over the flavour – from light and floral to strong and pronounced.

Recipe:

Brewing method:

Conical brewer like v60 or origami with conical filter.

Coffee dose:

19g

Grind setting:

Slightly coarser than brown sugar crystals (comandante 25 clicks).

Water:

300g

Water temperature:

93°C

Preparation:

  1. Prepare: vessel to which you will be brewing coffee  (can be server, jug or a mug)  , scale, paper filter, chosen brewer
  2. Grind 19g of coffee.
  3. Insert paper filter into the brewer and add 100ml of water to soak it and make it suit the brewer better 
  4. Add coffee and gently distribute it evenly..
  5. Divide your water into 5 pour, 60g each. Pour every potion every 40sec. Start timer when you make first pour:

  6. When the water goes through coffee bed, remove brewer and enjoy the coffee.

This coffee comes through Tariku Kare Exporters, a young but highly respected private exporter. Tariku Kare works across Sidamo and West Arsi, managing mills in both regions and sourcing high-altitude coffees grown between 1,900 and 2,150 masl — ideal conditions for top-grade Ethiopian lots. Recognized by the Africa Fine Coffee
Association for consistent quality, the company also invests back into the community: employing over 600 local workers (many of them women), supporting low-income
families with school supplies and financial aid, and offering farm training to help producers reach specialty standards. By creating a platform for farmers to sell nationally, they help strengthen both livelihoods and the future of Ethiopian coffee.

Variety

This lot is made up of indigenous Ethiopian heirloom varieties — the genetically diverse, landrace cultivars that evolved naturally in Ethiopia’s wild coffee forests. These heirlooms thrive in fertile, red-brown, well-drained soils at high altitude, and are known for producing complex, floral and fruit-driven profiles that have defined Ethiopia’s reputation in specialty coffee. The beans in this lot are screened at 14+ size, reflecting healthy development and uniformity in the cup.
