Espresso machine

This is a classic among coffees. You make it in an espresso machine, which pushes hot water through finely ground coffee under high pressure. This extracts all the essence from the coffee: intense flavour, aroma and that beautiful creamy foam on top, called crema. Espresso is the basis for many other coffees, such as lattes and cappuccinos. Short, intense and to the point!

Amount of coffee in a cup:

35g (there should be 60-70m of water going through coffee).

Recommended brewing time:

25-28s

Preparation:

  1. Prepare: cup in which you will be drinking espresso, scale, tamper

  2. Grind 18g of coffee.

  3. Add coffee to portafiler and distribute it evenly 

  4. Tamp it evenly/straight with tamper. It doesnt have to be very strong, if you feel the tamper is not going anymore down – that is enough..

  5. Flush the grouphead.

  6. Insert the portafilter and start the extraction.

  7. Put cups under the spouts.

  8. If you use traditional espresso cup (not bigger than 90ml of total volume), you should get not more than ⅓ of a cup.

Raquel’s father, Mr. Ronaldo, who produced this coffee, has always been a source of inspiration for her, offering support and valuable guidance. Ronaldo decided to divide his estate among his children, and Raquel was given the opportunity to carry on his legacy at Fazenda Cerrado Grande in the Campo das Vertentes region.
Initially, Raquel was full of doubts and overwhelmed by the responsibility of preserving her father’s lifelong work. She was a young woman, fresh out of university, with little experience in an industry dominated by men. The support she received from the farm’s team proved crucial, helping her gradually build confidence, implement her own management solutions, improve operational processes, and steer the farm toward specialty coffee production.
Today, Raquel dreams that her children will come to love coffee as much as she does, so she can pass the farm on to them and continue the family tradition in the future.

Variety

Catuai is a popular Arabica coffee variety created by crossbreeding Mundo Novo and Caturra. It was developed in Brazil in the 1950s, and its name comes from the Tupi-Guarani language, meaning “very good.”
This variety is known for its compact growth, which makes harvesting and maintenance easier, as well as its resilience to challenging weather conditions such as wind and rain. Catuai comes in two main variants: Yellow Catuai (yellow cherries) and Red Catuai (red cherries), which differ slightly in flavor profile.
Catuai coffee is valued for its balanced taste, featuring notes of fruits, citrus, and subtle sweetness. This makes it a popular choice for specialty coffee production in Latin America.

This process helps the coffee develop a unique flavor profile with heightened acidity and sweetness, qualities highly valued in specialty coffee.
Similar Brazilian farms using this method often place cherries in open tanks for a set period under controlled conditions, followed by meticulous drying on raised beds. Such careful processing ensures the development of exceptional fruity and floral notes while maintaining flavor balance
