This is a method for those who like to celebrate the brewing process of coffee. You use a special kettle with a long spout and a paper filter. First, you pour a little water over the coffee so that it let off the gas – this is called blooming. Then, slowly pouring in the rest of the water, you let the coffee drip straight into the cup. It’s kind of a drip method for coffee. It gives you complete control over the flavour – from light and floral to strong and pronounced.

Conical brewer like v60 or origami with conical filter.

Coffee dose:

18g

Grind setting:

Slightly coarser than brown sugar crystals (comandante 24 clicks).

Preparation:

  1.  Prepare: vessel to which you will be brewing coffee  (can be server, jug or a mug)  , scale, paper filter, chosen brewer
  2. Grind 18g of coffee.
  3. Insert paper filter into the brewer and add 100ml of water to soak it and make it suit the brewer better 
  4. Add coffee and gently distribute it evenly..
  5. Divide your water into 5 pour, 60g each. Pour every potion every 30sec. Start timer when you make first pour:

Juan Saldarriaga took over his family’s farms in 2012 and immediately began experimenting with cultivation. Today, El Encanto is a true variety garden — home to classics like Castillo and Caturra, alongside Tabi, Geisha, Bourbon, Maragogipe, and SL28. Covering 26 hectares, it’s his father Luis Saldarriaga’s favorite farm — perfectly kept, featuring a dedicated “variety garden” where you can literally walk between different arabica genetics.
Juan isn’t your typical Antioquian producer. Instead of chasing volume, he’s obsessed with precision and quality. After each harvest, the trees are stripped clean to reset for the next season, and pickers earn bonuses for the best cherries. The region’s high humidity makes drying a challenge, so Juan built his own multi-level drying system: raised beds under cover, 200 m² of movable shelves to switch between sun and shade, plus a cold-air dryer equipped with software that lets him fine-tune airflow and temperature for each variety.
The result? Coffees with depth, sweetness, and a sense of place. Beyond farming, Juan mentors and collaborates with a group of young local producers who share his drive to redefine Antioquia — proving that this region can deliver not only chocolatey, heavy-bodied cups but also bright, complex, and fruit-forward coffees full of character.

Variety

Colombia is a variety developed in Colombia as a cross between Caturra and the Timor Hybrid. It’s resilient yet retains pleasant sweetness and balance in the cup. When well processed, it reveals notes of red fruits, caramel, and chocolate — stable, solid, and the backbone of Colombian specialty coffee. In the Guambiano language, Tabi means “good” — and that’s exactly what it is. A hybrid of Bourbon, Typica, and Timor, it delivers a clean, juicy cup with notes of berries, apricot, and a delicate floral touch. It has body, elegance, and the ability to shine in any processing method. Castillo is a Colombian classic and the unofficial symbol of the new generation of farmers. Bred as Caturra’s successor, it’s more resistant and productive, while maintaining a sweet, approachable flavor. Expect red apple, milk chocolate, and caramel in the cup.
The combination of Colombia, Tabi, and Castillo creates a balanced yet surprisingly complex profile. Each variety brings its own character — Colombia adds sweetness and structure, Tabi brings juiciness and finesse, and Castillo rounds it out with classic balance.

Process

After cherry selection, the coffee undergoes a water soak to remove floaters. Cherries ferment dry in tanks, with water rinses every 6–8 hours. Smaller experimental batches undergoes extended fermentation up to 48 hours.
Drying is carried out using multiple systems: a mechanical silo, a cold-air dryer with adjustable settings, African beds inside a parabolic greenhouse, and shaded raised beds. Microlots are sent to La Claudina for slow drying — 20 to 30 days — at 25–30 °C. The result is a clean, sweet, and layered coffee with remarkable precision and balance.
