Pour over

This is a method for those who like to celebrate the brewing process of coffee. You use a special kettle with a long spout and a paper filter. First, you pour a little water over the coffee so that it let off the gas – this is called blooming. Then, slowly pouring in the rest of the water, you let the coffee drip straight into the cup. It’s kind of a drip method for coffee. It gives you complete control over the flavour – from light and floral to strong and pronounced.

Recipe:

Conical brewer like v60 or origami with conical filter.

Coffee dose:

18g

Grind setting:

Slightly coarser than brown sugar crystals (comandante 25 clicks).

Water:

300g

Water temperature:

91°C

Preparation:

  1.  Prepare: vessel to which you will be brewing coffee  (can be server, jug or a mug)  , scale, paper filter, chosen brewer
  2. Grind 18g of coffee.
  3. Insert paper filter into the brewer and add 100ml of water to soak it and make it suit the brewer better 
  4. Add coffee and gently distribute it evenly..
  5. Divide your water into 5 pour, 60g each. Pour every potion every 30sec. Start timer when you make first pour:

  6. When the water goes through coffee bed, remove brewer and enjoy the coffee.

The origin of this coffee

This decaf filter coffee comes from Finca Los Nogales in the Huila region of Colombia, grown at around 1770 meters above sea level. Huila is known for producing expressive, high-acidity coffees with clarity and sweetness, and Los
Nogales has built a reputation for quality-driven farming and careful processing. The cherries are hand-picked at peak ripeness and sorted with precision, ensuring that only the best fruit moves forward in the process.

Variety

The coffee is 100% Caturra — a natural mutation of Bourbon discovered in Brazil and widely planted across Colombia. Caturra is valued for its bright acidity, structured sweetness, and clean cup profile. In high-altitude regions like Huila, it often develops vibrant fruit character and floral nuances while maintaining balance and roundness. It’s a classic Colombian variety that responds beautifully to careful processing.

The coffee first undergoes a traditional washed process: ripe cherries are selected and floated to remove defects, then fermented for 24 hours, thoroughly washed, and sun-dried on raised beds. After drying and hulling (Excelso grade selection), the
beans move to the decaffeination stage. The decaffeination uses a natural solvent derived from coffee pulp (must). The beans are soaked in hot water multiple times to gently open their structure and extract caffeine. A natural coffee-based solvent is
then introduced to bind with the caffeine during a 24-hour immersion. Afterward, the beans are carefully washed and dried again for about five days. The goal is to remove the caffeine while preserving sweetness, body, and the coffee’s vibrant fruit character — and in this case, it truly delivers.
