Pour over

This is a method for those who like to celebrate the brewing process of coffee. You use a special kettle with a long spout and a paper filter. First, you pour a little water over the coffee so that it let off the gas – this is called blooming. Then, slowly pouring in the rest of the water, you let the coffee drip straight into the cup. It’s kind of a drip method for coffee. It gives you complete control over the flavour – from light and floral to strong and pronounced.

Recipe:

Conical brewer like v60 or origami with conical filter.

Coffee dose:

20g

Grind setting:

Slightly coarser than brown sugar crystals (comandante 25 clicks).

Preparation:

  1.  Prepare: vessel to which you will be brewing coffee  (can be server, jug or a mug)  , scale, paper filter, chosen brewer
  2. Grind 20g of coffee.
  3. Insert paper filter into the brewer and add 100ml of water to soak it and make it suit the brewer better 
  4. Add coffee and gently distribute it evenly..
  5. Divide your water into 5 pour, 60g each. Pour every potion every 40sec. Start timer when you make first pour:

The origin of this coffee

This Sudan Rume comes from Finca Amigos, an experimental varietal farm located in the lush mountains of Jardín, Antioquia, in northwest Colombia. Founded in 2018, the project set out to produce exceptional exotic varieties while creating employment for former Cooperative workers, and has since had a positive impact on the region. The 16-hectare farm sits at 1,741–1,950 masl, with 12 hectares planted with varieties like Laurina, Sudan Rume, Tabi, and Geisha, and 4 hectares reserved for forest conservation. Finca Amigos also focuses on ecological stewardship, planting over 650 native trees and protecting local biodiversity.

Variety

Sudan Rume is a rare and genetically distinct Arabica variety originating from the Boma Plateau in South Sudan, one of the few places considered part of coffee’s natural birthplace. It is known for very low yields and slow production, but also for
exceptional sensory potential — often delivering highly aromatic, floral, and tea-like cups with delicate fruit complexity. In the field, Sudan Rume shows better resistance to rust and Coffee Berry Disease compared to Bourbon and Typica, which partly explains why it has gained renewed interest among producers focused on quality over volume. Today it appears mostly on experimental farms and competition stages, valued as one of the most intriguing and exotic varieties in modern specialty coffee.

This Sudan Rume undergoes an extended double-fermentation process. First, the cherries are left whole for 36 hours, allowing a natural fermentation inside the fruit. After this stage, the coffee is pulped and dry-fermented for another 36 hours, intensifying flavor development and acidity. Once fermentation is complete, the parchment is moved to raised beds for slow sun-drying until it reaches around 11% moisture. The result is a hybrid natural-washed approach that brings both clarity and fruit complexity, highlighting the delicate character of Sudan Rume.
