Pour over

This is a method for those who like to celebrate the brewing process of coffee. You use a special kettle with a long spout and a paper filter. First, you pour a little water over the coffee so that it let off the gas – this is called blooming. Then, slowly pouring in the rest of the water, you let the coffee drip straight into the cup. It’s kind of a drip method for coffee. It gives you complete control over the flavour – from light and floral to strong and pronounced.

32g

Grind setting:

Jak kryształki cukru trzcinowego (25-27 klików na comandante).

Water:

500g

Water temperature:

94°C

Recommended brewing time:

3:00 min + drop time 30/40sec

Preparation:

  1. Prepare: vessel to which you will be brewing coffee  (can be server, jug or a mug)  , scale, paper filter, clever dripper.

  2. Grind 32 g of coffe.

  3. Put paper filter into clever dripper.

  4. Add coffee to clever and add 500ml of 94C water. Start the timer when you start pouring water.

  5. When timer shows 3:00 min put clever on server/jug.

  6. When whole coffee will be released from clever, put it aside and enjoy the coffee.

Our espresso decaf is made from cherries grown by smallholder farmers in the Corquín region of Honduras, at elevations of around 1300–1600 meters above sea
level. The farmers deliver their harvest to a local cooperative, where the coffee is processed using the washed method to ensure clarity and consistency in the cup. It’s a regional blend built on careful selection, solid farming practices, and classic Central American profile structure.

Variety

This lot is labeled as “mixed varieties,” which in Honduras typically means a blend of classic cultivars such as Catuai, Caturra, and IHCAFE 90. These are reliable, well-established varieties known for their balanced sweetness, structure, and cup clarity. Rather than showcasing one exotic cultivar, this combination delivers stability and consistency — exactly what you want in a solid, everyday espresso profile.

Processing

First, the coffee is processed using the traditional washed method: ripe cherries are depulped, fermented, thoroughly washed, and dried before export. Only then does the decaffeination take place in Germany using the water method (H₂O). The beans
are treated with steam to remove the silver skin, then immersed in water, which extracts caffeine along with other water-soluble substances. The caffeine is removed from the solution using activated carbon, and the flavor-rich liquid is added back to
the beans. A final drying stage restores the original moisture level. The idea is simple: remove the caffeine, keep the flavor.
