This is a method for those who like to celebrate the brewing process of coffee. You use a special kettle with a long spout and a paper filter. First, you pour a little water over the coffee so that it let off the gas – this is called blooming. Then, slowly pouring in the rest of the water, you let the coffee drip straight into the cup. It’s kind of a drip method for coffee. It gives you complete control over the flavour – from light and floral to strong and pronounced.

Slightly bigger than brown sugar crystals (27-28 comandante clicks)

Recommended brewing time:

2:45 min + drop time 30/40 sec.

Preparation:

  1.  Prepare: vessel to which you will be brewing coffee  (can be server, jug or a mug)  , scale, paper filter, clever dripper.

  2. Grind 31 g of coffee.

  3. Put paper filter into clever dripper.

  4. Add coffee to clever and add 500ml of 94C water. Start the timer when you start pouring water.

  5. When timer shows 2:45 put clever on server/jug.

  6. When whole coffee will be released from clever, put it aside and enjoy the coffee.

The Coffee Gardens, founded in 2017, is a community-driven project built to produce outstanding specialty coffee while doing right by the people behind it. Today, the Miwu microlot is created by 310 smallholder farmers — 19% of them women — living in the village perched on the mountain above the washing station. The project’s mission goes far beyond buying cherries: they work directly with growers to improve incomes, create rural employment, support women in coffee, increase transparency, and protect the environment. The team has been collaborating with these farmers for eight years, providing continuous training and hands-on support in Good Agricultural Practices to strengthen both livelihoods and the land they farm.

Variety

This microlot from Miwu brings together three varieties traditionally grown on the slopes of Mount Elgon: Nyasaland, SL14, and SL28. Nyasaland — the most locally rooted of the trio — has been part of Uganda’s coffee landscape for over a century, originally arriving from Jamaica and adapting perfectly to the region’s high-altitude climate. It’s a Typica-line variety known for its gentle acidity, clean sweetness, and subtle fruit notes that mirror the mountain terroir. SL14 adds structure and balance with its drought tolerance and steady, sweet cup profile, while SL28 contributes depth and clarity, offering the bright, fruit-forward character that has made it one of East Africa’s most celebrated varieties. Together, they create a cup that is unmistakably Ugandan — sweet, layered, and shaped by generations of smallholder farming.

Process

The processing for this microlot is designed to highlight clarity and sweetness. Freshly picked cherries are pulped the same day and undergo a 40-hour dry fermentation, a slow, oxygen-rich stage that develops clean fruit complexity and a round acidity. Once fermentation is complete, the parchment is washed thoroughly in cold mountain spring water to remove any remaining mucilage and lock in a crisp, bright cup profile. The coffee is then moved to raised African beds inside solar dryers, where it dries evenly and gently before undergoing an extensive sorting protocol — 12 separate stages in total — to ensure only the highest-quality beans make it to export.
