Pour over

This is a method for those who like to celebrate the brewing process of coffee. You use a special kettle with a long spout and a paper filter. First, you pour a little water over the coffee so that it let off the gas – this is called blooming. Then, slowly pouring in the rest of the water, you let the coffee drip straight into the cup. It’s kind of a drip method for coffee. It gives you complete control over the flavour – from light and floral to strong and pronounced.

Conical brewer like v60 or origami with conical filter.

Coffee dose:

19g

Grind setting:

Slightly coarser than brown sugar crystals (comandante 25 clicks).

Water:

300g

Water temperature:

93°C

Preparation:

  1. Prepare: vessel to which you will be brewing coffee  (can be server, jug or a mug)  , scale, paper filter, chosen brewer
  2. Grind 19g of coffee.
  3. Insert paper filter into the brewer and add 100ml of water to soak it and make it suit the brewer better 
  4. Add coffee and gently distribute it evenly..
  5. Divide your water into 5 pour, 60g each. Pour every potion every 40sec. Start timer when you make first pour:

  6. When the water goes through coffee bed, remove brewer and enjoy the coffee.

This coffee comes from the Abore washing station in the Bombe area of Sidama. Instead of sourcing from a single farm, the station receives cherries from more than a
thousand nearby smallholder farmers. Located beside a beautiful waterfall, Abore has earned a reputation for meticulous cherry selection and precise processing,
consistently producing some of the region's most distinctive coffees.

Variety

Heirloom is a term used to describe Ethiopia’s many traditional coffee varieties, most of which still grow wild or semi-wild. This lot consists of the 74110 and 74112
selections, developed in the 1970s for their disease resistance and outstanding cup quality. They are responsible for the floral, tea-like elegance and vibrant fruit character that Ethiopian coffees are so well known for.

Process

Natural is the oldest coffee processing method. In its modern form, whole coffee cherries are dried on raised African beds, allowing the beans to remain in contact with the fruit for an extended period while drying evenly and cleanly. The result is
greater sweetness, a fuller body and more expressive fruit notes. In this coffee, the process doesn’t overpower the cup — instead, it highlights juicy blueberries, honey- like sweetness and delicate Earl Grey notes while preserving remarkable clarity and
elegance.
