Pour over

This is a method for those who like to celebrate the brewing process of coffee. You use a special kettle with a long spout and a paper filter. First, you pour a little water over the coffee so that it let off the gas – this is called blooming. Then, slowly pouring in the rest of the water, you let the coffee drip straight into the cup. It’s kind of a drip method for coffee. It gives you complete control over the flavour – from light and floral to strong and pronounced.

Preparation:

  1. Prepare: vessel to which you will be brewing coffee  (can be server, jug or a mug)  , scale, paper filter, clever dripper.

  2. Grind 32 g of coffe.

  3. Put paper filter into clever dripper.

  4. Add coffee to clever and add 500ml of 94C water. Start the timer when you start pouring water.

  5. When timer shows 3:00 min put clever on server/jug.

  6. When whole coffee will be released from clever, put it aside and enjoy the coffee.

This coffee comes from the Team Pegasing washing station and farm in Panta Musara, Aceh Tengah, run by Hendra and his family. In a region dominated by
conventional wet-hulled processing, Hendra’s operation stands out as an experimental island of specialty washed coffee. After his father Hamdan moved to the area in 2006 and began experimenting with washed coffees based on old research and support from progressive Indonesian producers, the family invested heavily in
post-harvest infrastructure — building a wet mill with two pulpers, gravity washing channels, and raised drying beds under poly tunnels. Today the station processes up to 40 tons of green coffee annually, sourcing ripe cherries from around 70 local farmers incentivized to pick to specification. Hendra also runs a nursery for the historic Abyssinia varietal and works with farmers to grow it on small plots, paying premium prices to support quality over yield. He selects specific processes based on
weather and roaster demand, selling much of his coffee to specialty roasters in Jakarta and across Indonesia.

Variety

This lot features Tim Tim and Gayo 1 — varieties typical of Aceh’s highland coffee tradition. These are regional landrace selections adapted to local conditions at 1300–1500 meters above sea level, each contributing to a cup that balances clarity with fruit complexity. Their genetic background supports both quality and consistency, offering a profile that can carry bright citrus, sweet cherry tones, and that subtle
herbal depth which sets highland Indonesian coffees apart.

Processing

The coffee is processed with an attentive washed method tailored to the local environment. After hand-sorting and pulping, the beans are floated through gravity washing channels and fermented in concrete tanks for 12–18 hours, depending on conditions. Once fermentation is complete, the parchment dries on raised beds under poly tunnels for 8–14 days, weather permitting. Before bagging, the dried beans pass twice over a density table to remove underdeveloped seeds, followed by two rounds of hand picking to ensure cleanliness and specialty standard quality. This careful handling yields a washed coffee with both clarity and fruit-driven complexity.
