Espresso machine

This is a classic among coffees. You make it in an espresso machine, which pushes hot water through finely ground coffee under high pressure. This extracts all the essence from the coffee: intense flavour, aroma and that beautiful creamy foam on top, called crema. Espresso is the basis for many other coffees, such as lattes and cappuccinos. Short, intense and to the point!

Amount of coffee in a cup:

35g (there should be 60-70m of water going through coffee).

Recommended brewing time:

25-28s

Preparation:

  1. Prepare: cup in which you will be drinking espresso, scale, tamper

  2. Grind 18g of coffee.

  3. Add coffee to portafiler and distribute it evenly 

  4. Tamp it evenly/straight with tamper. It doesnt have to be very strong, if you feel the tamper is not going anymore down – that is enough..

  5. Flush the grouphead.

  6. Insert the portafilter and start the extraction.

  7. Put cups under the spouts.

  8. If you use traditional espresso cup (not bigger than 90ml of total volume), you should get not more than ⅓ of a cup.

This lot comes from various smallholder farmers in the Nuevo Oriente region of eastern Guatemala, an area where coffee production is deeply rooted in local communities. Farms here are typically small, family-run plots where coffee is grown alongside corn, fruits, and vegetables, supporting both livelihoods and food security. The coffees are brought together with the support of COUNISA — a company with over 30 years of experience working closely with farmers, helping them access the specialty market while promoting transparency, sustainability, and fair compensation.

Variety

This lot is composed of a mix of traditional Central American varieties: Pache, Bourbon, Caturra, and Catuai. Bourbon is known for its sweetness and round body, while Caturra and Catuai bring balance and structure. Pache, a natural mutation of Typica found in Guatemala, adds a local touch and often contributes a softer, more delicate cup profile. Together, these varieties create a balanced and approachable profile with both sweetness and subtle complexity.

Process

This coffee is processed using the natural method, where whole cherries are dried with the fruit intact. In the cool and humid microclimate of Nuevo Oriente, cherries mature slowly and dry gradually, allowing sugars and fruit compounds to infuse into the beans. This extended drying contributes to a sweeter, fuller-bodied cup with notes of dried fruit and chocolate. The result is a clean but comforting natural profile, shaped both by processing and the region’s unique conditions.
